in a mixer jar, add cashew nuts and grind until smooth powder
do not grind too much otherwise it will start to ooze oil
add sugar and water in a pan and cook until sugar dissolves completely
cook until syrup turns thick and little sticky
do not wait until the syrup reaches to the one string consistency
if it is cooked more than one string consistency, the kaju katli will turn hard
reduce heat to low and add cashew nut powder and cocoa powder
stit with spatula and mix well
cook and mix continuously until mixture thickens and leaves the sides of pan, do not over cook
turn off the flame and let it cool for 3-4 minutes
grease a plastic sheet, transfer the mixture over sheet
grease your palm with ghee and knead it for few minutes
roll it out into a desired thick round shape using rolling pin
you can also place a sheet over it to prevent dough sticking to rolling pin
cut it using a knief into diamond shape pieces
let it cool for 3-4 minutes
now melt dark chocolate in a double boiler or in the microwave
cut the chocolate transfer sheer to kaju katli size
apply a thin layer of melted chocolate on kaju katli and place the sheet over it
peel the sheet after 15-20 minutes
your kaju katli is ready to serve
serve or store in fridge
